  • 3 oz package strawberry jello
  • 1 package white cake mix

How to make it:

Make the cake, following the instructions on the package. Bake the cake for about forty minutes or until it is done at 350 degrees F. Let it cool in the cake pan for fifteen minutes, and then let it finish cooling on a wire rack. Poke holes all over the cake using a fork.

Dissolve the strawberry jello in the boiling water and pour this mixture all over the cake. You should set the wire rack over a rimmed baking sheet to catch any jello drips. Chill the strawberry poke cake for four hours or until the jello has set. Decorate the cake with whipped cream and fresh strawberries.

Book Review - Strawberry Girl

Strawberry Girl by Lois Lenski is one of the classic Newbery Medal Winners. Awarded the medal in 1946, it speaks of a time that was more familiar and current than today. Today this rich novel opens the window into a time few can remember. This is one of many books Lenski wrote with an emphasis on regional stories allowing young readers to get a taste of how American children lived during the early part of the twentieth century.

Strawberry Girl is an interesting read. At first glance the title and the cover picture of a young girl carrying a fruit basket can mislead the reader to expect a cute little story of a young girl who loves strawberries. Conversely, the story is more about clashes and tribulations between farmers and cattlemen along with how they resolved violent conflict than it is picking strawberries.

Strawberry Girl depicts two families, the Boyer's and the Slater's. The Boyer's move from North Carolina to Florida to raise strawberries, sweet potatoes and harvest oranges. The Slater's are cattle people and have lived in central Florida for a long time. They do not believe in putting up fences and they let their cattle roam all over the county even if it means destroying their neighbor's crops. The two families argue through out the entire book. The Slater family thinks the Boyer's are "uppidity" because of the Boyer's successful farming enterprises. The Slater's routine is to sit back and do nothing to improve their way of life.

Book Review - Strawberry Girl

This way of thinking creates hostile actions and feelings between the two families. Violence and drunkenness escalate through out the story. This book may cross the line with many adults when the neighbors begin to kill each others animals in addition to the school teacher getting beat up by the Slater boys. This incident forced the school to close for weeks. Certainly a little discussion with young children may be desired to explain why these incidents happened.

Additionally, Lenski writes in a Florida backwoods dialect typical of the time period which might be too challenging for third and fourth graders to read. I think this story should be read aloud to get the full effect of what the southern dialogue sounded like. For example, talk like

"Ha, ha! Hain't no dog! Hit's a coon." and "will git you yet, jest you wait."

However, I don't believe this book won the Newbery Award for its depiction of aggression. Times were hard in the early 1900's and resolution of conflicts back then is not typical of today. Strawberry Girl explains the day to day activities of the Boyer family. A young reader can learn exactly how to grind sugar cane and pull it for fun afterwards. Also the book explains the details of Florida weather in the spring and summer. Additionally it goes into detail on how to raise strawberries in sandy soil. Part of the charm of this middle grade novel is in describing how the old Florida pioneers did it.

Strawberry Girl is a sharply written novel about harsh times. It accurately describes a true to life pioneer adventure.

Although strawberries do well in areas that have some cool weather, frost is disastrous to your strawberry bed. A basic part of caring for this plant is to protect it with a layer of mulch during the winter. As well as protecting your strawberries from killing frosts, a three to four inch layer of hay or straw will provide even temperatures to protect them from the possibility of refreezing after an early spring or mid-winter thaw.

Don't mulch with fallen leaves since leaves tend to compact and will smother new growth in your strawberry bed.

Although many cultivators of strawberries are hardy to 15 Fahrenheit (-10C), mulch should be applied before the temperature dips to 20F (-6C) to protect buds and new growth from killing frosts. Do be sure all growth has stopped before you mulch. Otherwise, the crowns may decay. Winter mulch should be left in place until the first signs of spring growth.

Don't let the name hermit crab fool you. Hermit crabs are anything BUT hermits. They thrive on social interaction. Having only one hermit crab in a tank can actually drive them crazy I believe. I have had people bring me Strawberry Hermit Crabs that are acting weird and invariably, its because they were by themselves.

Anyway, I am here to help you take care of your Strawberry Hermit Crab properly. Different Hermit Crabs from different locals actually have different needs based upon the species. You don't take care of a Strawberry Hermit Crab quite like you do a Purple Pincher Crab. And when I say Strawberry Hermit Crab, I mean Coenobita perlatus.

Strawberry Hermit Crab Care Sheet

The most distinctive thing about a Strawberry Hermit Crab is its color. Generally bright strawberry red in color with white granual markings, with shiny gray-black eyes. They have thick bodies and thick legs for climbing.

Housing

Most people buy their Strawberry Hermit Crabs at a mall kiosk or pet store. And most of them get a small plastic box to hold the crab. I tell ya right now, that box is NOT good for a crabitat (crab habitat). It's fine for a temporary shelter, but your crabs need some room to roam and interact.

You should have bought at least 2 crabs, preferably 3, to get started. I would recommend starting with a 10 gallon aquarium. They are easy to find and inexpensive. Although larger is better. I recommend that you add an under tank heater to keep the temp up.

Line the bottom of the tank in sand or coconut fiber (Marketed as Forest Bedding®, Bed-A-Beast®, and Eco-Earth®). This is so your crab has something to dig around in. I prefer a combination of coconut fiber and sand. It provides a stable substrate for them to dig in. You need it deep enough for them to bury themselves in, but not so deep it negates an undertank heater.

Next you need something for them to climb on. I use a few pieces of choya wood for them to climb on. Some plastic plants will work as well. Strawberry Hermit Crabs are known to be destructive. So they will make a mess out of that well organized crabitat you just made. Be prepared for that.

Maintain a temperature of at least 72F degrees and I would say no higher than 90f degrees, and a humidity of 70%. You want a "tropical" feel for the crabs. If it gets to hot, you will smell a musty smell and notice a brown liquid coming from the crabs. TURN DOWN THE HEAT IF THAT HAPPENS!

Diet

The very first thing you need for a Strawberry Hermit Crab is a bowl of salt water. You can get safe salt at your local pet store or online, DO NOT USE TABLE SALT, its contains iodine, which kills crabs. Use a pet grade saltwater aquarium salt. Please use distilled water, or filtered and dechlorinated water. Straight tap water can kill your crabs. Chlorine causes blisters on their gills, causing a slow painful death.

Strawberry Hermit Crabs need 2 bowls of water. One salt one fresh. Make sure the bowl is not so deep the crab can drown in it. Place a sponge in each water bowl for the crabs. It is also a good idea to place a piece of wood, a stone, or something in the water that the crab can grab onto in case it gets distressed in the water. That way it can get itself out.

One food bowl should suffice. It Is very important to feed your Strawberry Hermit Crab a diet rich in carotene. Some of the best foods are sun dried shrimp, plankton, and color enhancing fish food. Make sure they always have access to these foods, and your crab will maintain a healthy red/orange color.

Maintenance

I feel that bathing a crab is mostly unnecessary. Only in certain circumstances will I bath them. When they first come home, after a molt, and thats about it.

Spot cleaning is best done weekly. Removing bits of exo skeleton, food bits, and other debris. Place all the climbing toys back, or its a good time for a remodel, keep the crabs from getting bored. If using coconut fiber substrate, clean what can be seen, and every few months change out all of the substrate.

Let the jars sit over night.

This article will continue with my series of New Orleans recipes.

Growing up in New Orleans was a lot of fun and we were blessed with a family of wonderful cooks. I have continued to publish some of these great recipes that I enjoyed while growing up in New Orleans. The legacy of cooking continues and has been carried on by my sisters and brothers as well as myself.

My mother and grandmother cooked all the time including desserts. There was always a good dessert around the house because like all good cooks they liked to see people eating their creations. My grandmother lived right around the corner from our house in New Orleans, so if mother wasn't cooking then Mata (grandmother) was. Of course most times both were cooking so you could eat both places and get your fill.

The Best Strawberry Shortcake Recipe Ever

My father was a little selective in the variety of things that he ate. My father loves desserts and I have a cousin who spent a lot of time at my house and my father and mother were her favorite aunt and uncle. Eunette was also a good cook and always made things that my father would like to eat.

She made her famous strawberry shortcake which my father loved and that was a great compliment if Uncle Edgar likes it. So the name was born for her strawberry shortcake which I am going to give you today. I have added her strawberry shortcake recipe for your enjoyment.

Strawberry Mixture

2 pt. strawberries, hulled and sliced

1/2 c. granulated sugar

1/2 tsp, vanilla

For the biscuit:

2 c, all-purpose flour

1 Tbsp. double acting baking powder

1/2 tsp. salt

3 Tbsp. firmly packed brown sugar

1 stick (1/2 c.) cold unsalted butter, cut into bits

2/3 c. plus 1 Tbsp, milk

2 tsp. granulated sugar

For the topping:

1 c. heavy cream, we!! chilled

2 Tbsp. confectioners sugar

3 Tbsp, sour cream Making biscuits: Into a bow!, sift together the flour, baking powder, and salt. Add brown sugar and butter. Blend until it resembles coarse meal.

Add milk and stir until it forms a dough. Drop the dough in 8 mounds on a buttered baking sheet, letting the mounds touch to form a ring. Sprinkle it with granulated sugar and bake the biscuit in a 4250 oven for 20 to 25 minutes or until golden. Carefully transfer the biscuit to a rack and cool. Cut the top one-

quarter off the entire biscuit ring with a serrated knife. Transfer the bottom to a platter and spoon the macerated strawberries and the liquid over it. In a bowl. beat the cream with the confectioners sugar until it just holds a soft peak. Beat in the sour cream and beat the mixture until it is stiff. (It is best to use a chilled bowl). Top the macerated strawberries with the cream mixture and the remain­ing 1/4 of the strawberries and cover the mixture with the biscuit top.

Serves 8. Enjoy!

Home-made Strawberry Wine - The Simplest Recipe

With a perfect blend of the freshest and sweetest fruits, strawberry wine is among the delicate and exquisite wines you can make at home. If you are unrelenting in making a strawberry wine, you should plan this in advance especially if you are thinking of serving this for a particular occasion because strawberry wines need to age for one year.

To start the winemaking process, gather the needed ingredients. They include seven pounds of whole, freshly picked strawberry fruits. Wash them and hull. You will also need 2 galloons of boiling water, lemon juice and five pounds of sugar.

To begin the preparation, mash the strawberry fruits in a large crock, or any fitting casserole. Cover the mashed strawberries with boiling water. Add the lemon juice and stir the mixture quickly for around two minutes. You may set this aside, covering with a linen cloth. Rest the crock in a dark and cool area, and make sure to stir it everyday for a week.

After a week, purify the concoction through cheesecloth that is double layered and strain them in a large bowl, thoroughly discarding the strawberry pulp. Mix the strawberry liquid and the sugar, stirring them constantly until the sugar is dissolved. Pour into a container and let it stand for another week, still stirring daily.

When the second week is over, you may pour the strawberry juice into a galloon of wine bottle, preferably glass-made. Cork them loosely. Let it rest in a dark and cool place for about three months. When you see that the wine is no longer bubbling and perfectly clear, you may pour it into individual wine bottles, cork them and let them age for a year. By doing so, you will be serving and tasting a deliciously homemade strawberry wine. This recipe can yield about 40 servings or two galloons.

Strawberry wine may vary accordingly. You can choose to taste it semi sweet, lightly sweet or sour or completely sweet.

Strawberry Champagne Cake and Strawberry Champagne Buttercream Frosting Recipe

For Easter I wanted to make a spectacular treat for my guests, and after careful contemplation I decided to make a Strawberry Champagne cake. I thought this was perfect for two reasons. First, it has been a long winter full of no fresh berries. The stores are replenishing their shelves with lush, ripe berries, and I want in! Secondly, I thought the strawberries mixed with champagne would be the perfect celebratory cake to eat when I watched Prince William and Princess Kate marry. Yes, I woke up at 4 am to watch the festivities, and yes, I ate strawberry champagne cake at 8 am! I had planned on having a glass of gorgeous pink strawberry flavored champagne along with my slice of cake, but, alas, I couldn't bring myself to do it so early in the day.

Anyway, I searched online and found a recipe that looked pretty good. And then I made it spectacular by adding my own special touches. I also have a favorite buttercream frosting recipe that I always use, and I used it for this cake, and added extra delicious ingredients. There is much debate when it comes to changing a recipe -- some are for it, and some are against it. I think it is essential to keep your liquid to dry ingredients about the same as it calls for in the recipe. But when it comes to adding fresh fruit, chocolate, nuts, I say knock yourself out! Eyeball it, make sure it looks (smells) right, and go to town. These small touches really make a recipe spectacular.

To make the cake even more special I decided to add fresh strawberries and ganache to the center instead of just the strawberry buttercream frosting. This is a good idea in theory, however, I do not recommend using fresh fruit in a cake. I ended up having little streams pouring out of my cake, and I had a very sticky puddle on my cake platter. The sugar in the frosting brings out the juices in the fresh fruit. If you are intent on using fresh berries (as am I) I would recommend making a strawberry (or any other fruit or berry) sauce. This way you will still have the fresh ingredients without the sticky mess.

Strawberry Champagne Cake and Strawberry Champagne Buttercream Frosting Recipe

The cake was a hit! My family loved it, and my uncle even said that it would have to be his next birthday cake (what a compliment!). I think of all the desserts I have made, this is a fan favorite.

Strawberry Champagne cake:

1 cup (2 sticks) butter
2 cup sugar
2 egg

3 cups cake flour
2 tsp baking powder
½ tsp salt

½ cup champagne
½ cup pureed strawberries

1 tsp vanilla extract
1 ½ cup chopped fresh strawberries

4 egg whites

Cream butter and sugar until light and smooth. Add the egg and mix until completely incorporated.

In a separate bowl combine and sift the flour, baking powder, and salt. In a dish combine the puree and champagne. Alternate adding the flour and strawberry mixtures to the butter mixture. Start and end with flour for a fluffy cake. Add the vanilla. Add the strawberries mixing until just incorporated. Fold in half the egg whites, then fold in the remainder.

I like to put the batter into a piping bag to fill the cupcake tins. Batter should reach just over ¾ of the tin.

Bake at 350 for 35 minutes.

Strawberry Buttercream Frosting

1 cup butter
1 package (2 pounds) powdered sugar
heaping 1/3 cup pureed strawberries
1 tsp vanilla
chocolate shavings for garnish

Cream the butter until light and fluffy. With continuous mixing, add a bit of the powdered sugar (add some of the strawberry puree if it gets too thick). Keep adding the sugar in small increments until completely blended with the butter. Add the remainder of the strawberry puree and the vanilla. If the frosting is still thick, add some champagne! Add chocolate shavings on top of the frosted cupcake for a decadent treat!
